In “Holly Jolly Secrets Part 2,” the audience is given its first scrap of backstory when watching one of the Ice King’s old VHS tapes. In the tape, he introduces himself as Simon Petrikov and he describes how the crown has been giving him visions, and how his fiance left him.
Viewers see Simon describing his worsening condition. When he cries this out in the last sequence, he’s almost fully transformed. This scene is special because Finn, Jake, and the viewers come to the realization together that there’s more than meets the eye with the Ice King.

In season 5 episode 31, “Too Old”, Finn and Princess Bubblegum enter feudalistic Castle Lemmongrab, where everyone suffers under the Earl’s rule, including the “softer” Lemongrab brother.
When PB and Finn break Lemonhope out of the castle, the softer Lemongrab (who has been eaten at this point) forces himself out of the mouth of his dominant brother, and screams out this dialogue, pleading to Lemonhope to return someday. In “Betty,” we get more backstory when the crown temporarily loses its magic, transforming Ice King back to Simon. Without magic, Simon can’t survive, so he creates a portal into the past to apologize once more to Betty. Betty jumps through the portal into the present with them, but their reunion is brief. Simon turns back into the Ice King, and Betty begins a quest to find a way to bring Simon back.
Ice King’s tragic backstory sneaks up on viewers. At first, the Ice King is merely a nuisance to other characters, a clumsy trickster that Finn and Jake must defend the princesses from. Slowly the story grows more complex, and more characters get involved. Betty adds more depth to this story, and her eventual descent into madness makes the tale all the more tragic.
